Grown in the high elevations of Taiwan and Fujian China, Oolongs are partially oxidized teas (from 8 to 80 percent) whose leaves are subject to a delicate process of fermentation, withering and rolling. Each tea master's methods of cultivation, preparation, and processing are unique and differ widely according to their terroir and tradition.
