Hibari is a superlative matcha created of shincha (first flush) tencha from the southern region of Uji, Kyoto, the ancestral home of matcha. This usucha-style matcha (thin tea) is smooth and medium bodied, with a wonderfully grounding and steady energetic presence. Fresh, delicate notes of early spring grass spill forth from this blend of Samidori, Yabukita and Ujihikari cultivars.     Bring filtered or spring water to 160ºF. Put 1/2 tsp of matcha in a sifter; gently sift powdered tea into a matcha bowl. Add  4-5 ounces (or to preference) of 160ºF water and whisk, in an M or Z motion, until fully incorporated and a fine froth is achieved.
