No. 79, Nobuyuki Sencha

                Shiso ~ Steamed Edamame ~ Floral ~ Mineral

A unique cultivar created by the very talented Mr. Konishi, is used for this excellent, well-structured organic sencha which evokes notes of freshly steamed edamame, the refreshing astringency of chicory, such as endive, and lively, bright and herbaceous shiso. The brew gradually unfolds to reveal delicate floral suggestions of rose with a pleasant cooling sensation on the palate.   

This tea was grown on Mr. Konishi's tea garden in Shizuoka, where his family has lived for the past 900 years, without chemicals or pesticides. 

Origin: Kawanehon, Haibara District, Shizuoka Prefecture, Japan - 2017 Shincha

Brewing Instructions:  

  • 1 tsp per 8oz/250ml of water  
  • 160ºF/72ºC  (Bring fresh, cold spring water to a boil. Remove from heat, set aside 5 minutes, and proceed.)  
  • Brew 2-4 minutes  
  • Good for 2 infusions
